Introduction
Plum Catering is a bespoke catering company where all the food is produced from locally grown ingredients season by season. I have a very strong belief in the integrity of the ingredients we cook with and I am always careful to respect this when I introduce other flavours to a recipe.
I am fortunate to live by the sea in Brighton and take full advantage of the wonderful fresh fish that is landed further along the coast in Hove. In addition to fish the Southdowns produces some of the best free range lamb in the country.
This is what makes cooking so exciting, recipes which are inspired from the food stocks that surround us. The motivation for cooking is always the local bounty and of course the prospect of sitting down to enjoy the food that you have cooked.
Kim Ryan- Biography
My cooking credentials begun 25 years ago with a basic chefs training. I didn’t like
the discrimination against women in the kitchen which was more typical in the 70s
and 80s than one would expect now but my passion for food had already been ignited.
I followed up my training with a cordon blue course in London where I learnt classic French cooking. In London I learnt the important rudiments of French cooking which formed the basis of everything I continue to do today. The experience I’ve gained in the intervening years continues to inform my cooking, I would never consider my training over because there is always something new to learn. I have worked in restaurants, on airplanes, as a food writer and most importantly as cook to my very appreciative family. They are my discerning critics when I am working on a new recipe and brave enough to sample everything I make.
